Coffee beans (medium to medium-coarse grind)
Ingredients:
- Coffee beans: 30 grams (about 2 tablespoons)
- Water: 500 grams (about 17 ounces)

Preheat: Boil your water and let it cool slightly (ideal temperature is around 200°F or 93°C). Preheat the Chemex by pouring hot water into it and swirling it around. Discard the water before brewing.

Prepare the Filter: Place a Chemex paper filter in the top of the Chemex, ensuring the three-layer side is facing the spout. Rinse the filter with hot water to eliminate paper taste and to preheat the Chemex. Discard the rinse water.

Grind Coffee: Grind your coffee beans to a medium-coarse consistency. You should aim for a texture similar to sea salt.

Add Coffee: Place the Chemex on your scale and add 30 grams of coffee grounds into the filter.

Bloom: Start your timer and pour about 60 grams of hot water over the coffee grounds in a circular motion, making sure all the grounds are evenly saturated. Let it bloom for 30 to 45 seconds. This step allows the coffee to release carbon dioxide and enhances flavor.

Brew: Slowly pour the remaining 440 grams of hot water over the coffee grounds in a circular motion, starting from the center and working your way outwards. Maintain a steady pour and avoid pouring directly onto the filter. Aim to complete this within 3 to 4 minutes.

Finish: Once the water has fully drained through the coffee grounds, remove the filter and discard it. Give the Chemex a gentle swirl to mix the coffee.
